Disodium succinate is an organic substance with the chemical formula of C4H4Na2O4 · nH2O (n=6 or 0), referred to as WSA, commonly known as stemnetin, which has two forms, namely crystalline disodium succinate and anhydrous disodium succinate. The hexahydrate is crystalline particle, and the anhydrous is crystalline powder. It is colorless to white, odorless, and has a taste threshold of 0.03%. It is stable in air and easily soluble in water [1-2]. Disodium succinate is an organic acid food flavoring agent approved by China. It is often used together with sodium glutamate, and the general use amount is about 10% of sodium glutamate [1] [3].

As a condiment and compound condiment, this product is commonly used in soy sauce, aquatic products, seasoning powder, sausage products, dried fish products, with the dosage of 0.01%~0.05%; It is used in seasoning of instant noodles and convenient food, with freshness and special flavor, and the dosage is about 0.5%. As the flavoring of sake and synthetic sake, the dosage is 0.01%~0.09%; As a condiment for soy sauce, sauce, cool drinks and cakes, the dosage is 0.02%~0.09%.

Application

As an ingredient used in hams, sausages, seasoning liquids and other food stuff.
