Vitamin B1 (VB1), also known as thiamine, is the first water-soluble vitamin purified by people. It is synthesized by fungi, microorganisms and plants, while animals and humans can only get it from food. Vitamin B1 is mainly found in the husk and germ of seeds, such as rice bran and bran, and also in yeast.
Thiamine often appears in the form of its hydrochloride [3], the molecular formula is C12H17ClN4OS · HCl, and the molecular weight is 337.29. It is also called thiamine hydrochloride. White crystalline powder. It has weak and special smell, bitter taste and deliquescence. Melting point 248 ℃, easily soluble in water, slightly soluble in ethanol, insoluble in ether and benzene.
