Cocoa powder, an unsweetened chocolate product, adds deep chocolate flavor to desserts and beverages. Cocoa powder occurs when the fat, called cocoa butter, gets removed from the cacao beans during processing. The leftover dried solids get ground into the product sold as cocoa powder.

Natural cocoa powder is cocoa that has not had its acid stripped. Natural cocoa powder is usually lighter in color, and because it has all of its acids in tact, it is usually paired with baking soda because the metallic taste that is released in the sodium carbonate of baking soda is mellowed by the acid in natural cocoa powder.
What is Dutch processed cocoa powder/Alkalized Cocoa Powder?
Dutch process cocoa powder is more commonly found in Europe and has a few properties that set it apart from natural cocoa powder. It’s made from cacao beans that have been washed with a potassium solution to neutralize their acidity from a pH of 5 to a pH of about 7. This means that Dutch process cocoa powder is only slightly acidic because of that Dutching process. This process also softens the flavor.
