Unlike sweet almond oil, which is extracted from the seeds of the sweet almond tree (Prunus amygdalus var. dulcis), bitter almond oil contains higher levels of amygdalin, a compound that can release cyanide when metabolized. Because of this, bitter almond oil is used with caution and is often processed to remove harmful components before being used in cosmetics or other applications.
