Products Description
Catalase is a common enzyme found in nearly all living organisms exposed to oxygen (such as microbe, plants, and animals). It catalyzes the decomposition of hydrogen peroxide to water and oxygen. It is a very important enzyme in protecting the cell from oxidative damage by reactive oxygen species (ROS). Likewise, catalase has one of the highest turnover numbers of all enzymes; one catalase molecule can convert millions of hydrogen peroxide molecules to water and oxygen each second.
Function
- Catalase is used in the food industry to remove hydrogen peroxide from milk used to make cheese.
- Catalase is also used in food packaging to prevent food from being oxidized.
- In the textile industry, catalase is used to remove hydrogen peroxide from textiles to ensure that the finished products do not contain peroxide.
- Used in contact lens cleaning: After the lens is soaked in the detergent containing hydrogen peroxide, the residual hydrogen peroxide is removed by catalase before use.
Enzymatic Properties
The pH optimum is 5.0 with a stability range of 4.0 to 7.0. The optimum temperature is 55ºC with a stability range of 45ºC to 55ºC.
Activity
One unit (U) is defined as the amount of enzyme which can hydrolyze one micromole of 100% hydrogen peroxide in one minute at 30º C and at pH 7.0. The acceptance criteria for all enzyme assays is: NLT 85.0% and NMT 115.0% of the declared units of enzyme activity.
